It contains an enzyme that actually is trying to "digest" the lining of your mouth! Don't worry, it won't cause any real damage, just that uncomfortable feeling. You can try to inactivate the enzyme by soaking the pineapple pieces in a dilute salt solution.

I am not sure why but i am sure it is acidic but i do know that back in the day they used it primarily as a marinade.
