can i make changes to one scanned document, changing date, name like that.

Your scanner came with a installation CD with Optical Character Recognition (OCR) software. Sometimes you will have to load the disk and manually choose to install the OCR software. Once you install the OCR software, and go to scan you will see an OCR option. The document will now appear as a editable text document, and not a picture (as you are dealing with now). Some OCR software isn't that great and will mangle the document a little, like mistaking an "e" and instead putting a "3" in there. Best of luck.
