first i make the mash from overripe apples by cutting the skin off, then cut up the apples, (leaving the seeds out) and boil the apples first, making something like a soup then pour it in a bowl , then boil the skins, and put them in the bowl then mash it all together to make like a smoothie almost, then add the right amount of water, and sugar, then prepare the yeast, then add it to the mix, then stir it in , and put it in the fermentor, and hook the airlock to it and wait, within two weeks, i should have a nice 80 proof product. -------is that everything that is absolutely necessary to get a product? i dont care about taste. if not, what do i need to know? pleeeeeeease help.

it takes 28 days for it to fermint and then all you have is apple wine. if you cook it through a still after it ferments then you get brandy but it has to be cooked down to 36% alcohol or 70 proof you can not make brandy unless it is distilled. the way you are trying it you will only get 9% at the most i know because i have done it. and i might add its illegal to even own a still in the USA

That gets you apple wine. It won't be anywhere near 80 proof. Yeast dies out at about 16% alcohol or 32 proof so you can't just ferment to 40% alcohol.

You have to distill the wine to make brandy. The only way you can get the higher alcohol content is to distill.

Distilling has a limit too. You can only get to about 95% pure ethanol by standard distillation because the water vapor will make it up the column at least a little. That is why Everclear is 190 proof.

APPLE BRANDY
(the real deal)

2 cups chopped red apples
3 cinnamon sticks, 3 inch
2 tablespoons water
2 1/2 cups sugar
2 cups brandy
3 cups dry white wine
Combine apples, cinnamon sticks, and water in a sauce pan.
Cook covered over medium heat for 10 minutes; add sugar, stir until dissolved. Cool.
Combine apple mixture, brandy, and wine in large airtight glass container.
Store in cool dark place for 3 weeks, shaking container every 3 days.
Strain through double thickness cheesecloth. Pour into glass bottle and cover tightly.
Store in cool dark place for 2 weeks before drinking.

You've just described making a poor hard cider.

For the time and effort required to distill the cider into apple brandy (which is the next step), you're better off just buying a nice bottle of Calvados.
