If sandwiches is the main course I'd go for some sort of really casual finger food - or - I like to take a really great green salad or a really wonderful fruit salad to bbqs and the ladies at the bbq are generally grateful for something they can eat freely without guilt. I've got another answer under a question about what is your favorite vegtable if you want some really good and very simple salads that I have invented.
For a fruit salad, here's my secret but shhhhh....it's a secret!
Put together a fruit salad of whatever fresh seasonal fruits are around cut into bite sized pieces- melon, grapes, ripe pears, nectarines, peaches, kiwi, halved and pitted cherries, pretty much anything is ok - I use as many different fruits that I can but I never use citrus (too sharp) or bananas (they get yucky looking fast and won't keep if you have some left, which I rarely do) and I limit the amount of apples, (just a little to crunchy) - and here's the secret - open a can of lychee nuts (I usually use a 14 or 16 oz can on a very large salad for 10-15) and add the entire contents, including the heavy syrup. Toss the salad gently to be sure all the fruit is coated with the syrup. Let this set for about an hour before it's served so the fruit is infused with the lychee flavor - it's OK if it sets longer than that but refrigorate it. The syrup coats the fruit and keeps it from changing color, and yes, it adds a little sugar but not much when you look at it by the serving.
Lychee nuts (for those who don't know) are an asian fruit about the size of a small plum with a mild, flowery flavor. You can find them at Asian markets and in some grocery stores. They are worth looking for for this salad, really, and I usually keep several cans on hand as staples. The fruit salad is all I ever do with them...when I'm taking this somewhere new I usually offer a "prize" of some sort to the person who can identify the secret ingredient. This salad always gets rave reviews!

A really good cole slaw.
8 cups cabbage, finely chopped (about 1 head)
1/4 cup carrots, shredded (1 medium carrot)
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon jui
Be sure cabbage and carrots are chopped up into very fine pieces (about the size of rice).
Combine sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat until smooth.
Add cabbage, carrots, mix well.
Cover and refrigerate for at least 2 hours before serving.
Serves 10 to 12.

How about a nice green salad? Dark green lettuce, chopped green onions, shredded carrots, fresh broccoli florets, dried cran berries, toasted slivered almonds and toasted sesame seeds. With Paul Newmans low fat sesame ginger salad dressing. I like to add chunks of bleu cheese and wonton crispy noodles.
