Egg Salad Sandwich:
Ingredients:
1 large hard-boiled egg*, peeled and chopped
2 Tbsp mayonnaise
1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted (you can use any type of bread).
Method:
*To make hard boiled eggs, place a few eggs in a saucepan, cover with water. Add a half teaspoon of vinegar to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer.
Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper and curry powder. Mix. Spread on the rye bread, add lettuce, and cut in half.

Hamburger and Macaroni Recipe
Ingredients:
1 pound ground beef
1 yellow onion, chopped (or mixed chopped green onion greens and yellow onion)
Olive oil
1/2 teaspoon Vegesal or other seasoned salt
Dash crushed red pepper
1/2 teaspoon celery seed
1 large can (28 oz) of diced tomatoes
2 Tbsp Worcestershire sauce
1/4 cup chopped parsley
2 cups uncooked macaroni (use rice pasta for wheat-free version)
Method:
1 Get a large pot of hot water heating and begin cooking the macaroni as per the directions on the macaroni package.
2 In a skillet, brown the ground beef in a tablespoon of olive oil on high heat. Stir only infrequently so that the ground beef has an opportunity to brown
3 In a large skillet, sauté chopped onion with a tablespoon of olive oil on medium high heat. Add the ground beef and lower the heat to medium. Add a dash of crushed red pepper. Add Vegesal or other seasoned salt. Add celery seed. Add canned tomatoes. Add Worcestershire sauce. Bring to a simmer and let simmer for 5 minutes. Mix in the drained and cooked macaroni and parsley. Simmer for another 5 minutes.
Serves 4.

French Toast:
Ingredients:
5 eggs
2/3 cup milk
Finely grated zest of 1 orange
2 teaspoons of cinnamon
8 thick slices of day-old bread, better if slightly stale
Maple syrup
Fresh berries
Butter
Method:
1 Beat eggs and milk together. Add the Triple Sec, orange zest, and cinnamon. Whisk until well blended. Pour into a shallow bowl.
2 Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some butter (or use vegetable oil) over a skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.
3 Serve hot with butter, maple syrup, and fresh berries.
Serves 4.

Hamburger:
Ingredients:
1 lb hamburger meat
2 heaping tablespoons of chopped fresh rosemary leaves (not the stem)
Salt and pepper to taste (perhaps half a teaspoon of each).
Buns
Lettuce
Tomatoes, sliced
Onions, sliced
Avocado, peeled, pitted and sliced
Mayonaise, ketchup, mustard
Method:
Mix the rosemary and A1 sauce into the hamburger meat, distributing evenly. Add salt and fresh ground pepper. Form out the hamburger patties. If the meat is low-fat, you may want to add some grapeseed oil or olive oil to the mixture, or after the patties are made (but before cooked), rub some oil over them. Place on a hot grill or grill pan. If you are indoors with a grill pan, be sure to use your stove fan. If on grill pan, lower the heat to medium high. Grill on one side until you can see the juice begin to run at the surface. Flip over and grill on the other side, again until you can see some juice coming through. If you wish, grill the buns on remaining grill surface. Onions can be either served fresh with the hamburger or sautéed a little in olive oil.
Serve burgers with lettuce, tomatoes, onions, avocado, mayo, ketchup, and or mustard. (For the low-carb version skip the bun.)
Serves 3 to 4.
Safety tip: Try to get your hamburger meat from a butcher who grinds their own. That way you know where the meat came from. Bacteria love raw hamburger, so once you have some in your fridge, eat it up quickly - no more than a day or two at the most after you've bought it or defrosted it.

Quick Macaroni and Cheese:
Ingredients:
2 quarts water
1 teaspoon salt
2 cups uncooked elbow macaroni (can use regular or rice pasta)
2 Tbsp unsalted butter
1/2 lb cheddar cheese, grated (about 2 cups, packed)
1/4 cup milk
1/4 cup ham, chopped into 1/4 inch cubes
Freshly grated black pepper
Method:
1 Bring 2 quarts of water with the teaspoon of salt to a boil in thick-bottomed saucepan. Add the elbow macaroni and follow the cooking time instructions on the package, minus about 2 minutes. (If your macaroni doesn't come with instructions, start checking at 7 minutes). Cook until al dente - cooked through, but still slightly firm. Drain the water from the cooking pan (if you use a colander, return the macaroni to the pan). Lower the heat to low/warm.
2 Add the butter. Stir in to coat the macaroni. When the butter is about half melted, you can stir in the cheese. Add the milk. Stir in until all the butter and cheese is melted and blended well with the milk. Add the chopped ham and a few twists of freshly grated black pepper.
Serve immediately. Serves 3-4 adults or 4-6 kids.
