I came up with this a few years ago and it has done well at Pot Lucks...
Tropischetta
1 can well drained pineapple tidbits
¼-1/3 cup olive oil
¼ cup? sundried tomatoes packed in oil (cut thinly in julienne style)
2-4 cloves chopped garlic
2/3 tbs of freshly chopped basil
(ALL “measurements” are approximate)
Heat oil in a skillet and then add well drained pineapple. Cook for a few minutes until pineapple starts to become soft. Add garlic and cook for a few more minutes, add tomatoes, cook for a few more minutes, add basil stir for another minute or so and remove from heat. Let cool to and place in a glass bowl. After it has cooled, cover and refrigerate.
Serve over fresh Italian bread… it can be toasted if you wish, but not necessary. Let me know if you can think of a better name for this. I came up with this about 5 years ago and never actually named it, but since it was inspired by bruschetta and is made with pineapple, I thought Tropischetta might be a decent name.

If you are looking for something hot to bring in a crockpot, how about crockpot lasagna??? I have brought this to functions at work, and it is always the first pot empty!! SUPER easy to make...and SUPER DELICIOUS!!
CROCKPOT LASAGNA
1 lb ground beef or turkey, browned and drained
8 lasagna noodles, uncooked
1 (28 ounce) jar spaghetti sauce, any style
1 teaspoon oregano or italian seasoning
1/3 cup water
1 (1 small) can sliced mushrooms, drained (optional)
1 small onion, chopped (optional)
15 ounces ricotta cheese
2 cups mozzarella cheese, shredded
Break noodles into pieces and place in bottom of greased crockpot.
Stir seasoning into browned meat and place atop lasagna noodles.
Layer half sauce and water/half mushrooms/half ricotta cheese/half mozzarella cheese over meat.
Repeat layers.
Cover and cook on low for 5 hours.

"French Rice" 1 10-oz can French Onion soup; 1/2 c melted butter; 1 4.5-oz can/jar sliced mushrooms; 1 8-oz can sliced water chestnuts; 1c uncooked rice.
Lightly grease 10x6x2 covered baking/casserole dish. Combine (in dish) melted butter and soup. Drain and reserve liquid from mushrooms and water chestnuts Add water to reserved liquids to total 1-1/3c. Add mushrooms, chestnuts, liquid, and rice to soup/butter mixture. Stir. Cover and bake at 350deg for 1 hour. Dish reheats and
travels well + little mess to clean and the baking time affords the time to get ready!

You could make an appetizer like Artichoke Dip...
2 cans artichoke hearts diced
1 cup mayo
1 cup parm cheese
4 cloves of garlic
sprinkle w/ paprika and bake for 20 mins on 350
---if you want to make it even tastier add some fried bacon (diced up) and the grease......serve w/ tortilla chips

how about shredded pork sandwiches or
hot wings buy a 4 pound bag deep fry them put in cassarole or foil container make hot sauce with tabasco and butter in mic then mix pour over and then ur ready to go
or make garlic cheddar mashed potatoes

chocolate chip cookies

make cucumber vinegar salad its so good. Or bring coleslaw maybe potato salad. Worse come to worse bring a couple big bags of potato chips.
