Things are generally stereotypes because they are very broad generalizations of a particular group.
e.g.
Girls are bad at math.
White men can't jump.
Children who are homeschooled don't get a well-rounded education.
And in my experience, the people of Mexican decent or who were born in Mexico who I have worked with tended to work as hard as my other employees and attended the same schools as everyone else.

Your question is a bit confusing. Are you asking 'Why are there these horrible stereotypes about Mexicans?' or are you asking 'What are some of the stereotypes about Mexicans and how do you think these came to be?'
Also
Are you asking about Americans (USA Citizens) stereotypes of Mexicans in the United States or are you asking about Americans stereotypes of Mexicans in Mexico?
And what does this have to do with homes schooling?
Are you a home schooled student ?

That's a terrible stereotype. Do you truly believe this? Do you really think all Mexican Americans attend poor schools, and have only one member working? All of them? C'mon...if you believe this something is wrong with you!

I lived in an middle upper class neighborhood where there was mostly Mexicans. The school was the best in the district and scored highest on all test. Both parents worked and worked hard. I've never heard this sterotype before but sterotypes always make me angry. It's childish to beleive in these.

I don't think your information is correct. I've never heard that. I think the stereotype is more that they have to drop out of school early to help support the family. Not that there is only one working. Often they are very hard workers. Doing anything they can to help support the family and improve the lives of their children and grandchildren.

The vast majority of people fear what they know little about or things that are different. Stereotypical generalizations are a poor attempt for people to be more comfortable with themselves and the world around them.
