Sorry...I am not sure if I spelled that correctly.

2-3 tablespoons oil (not olive oil)
1 small onion, chopped
1 (16 ounce) can sauerkraut, rinsed and well drained
1 teaspoon caraway seeds (optional and to taste)
relish
Prepared thousand island dressing
6 pumpernickel bread, slices
1 1/2 lbs sliced corned beef (add more if you like)
6 slices swiss cheese
Heat oil in a skillet.
Add in onion; saute over medium heat until tender (about 7-8 minutes).
Add in sauerkraut and caraway seeds; cover and cook over medium heat (stirring ocasionally) until sauerkraut is tender and lightly browned (about 20 minutes).
Split the bread rolls (careful not to cut all the way through).
Place pastrami down the center, dividing evenly between buns.
Top with sauerkraut/onion mixture, then the dressing, then top with cheese.
Wrap in foil (leave top open).
broil about 8 inches from heat.
Heat through and until cheese has melted (about 3 minutes).

"Reuben Sandwiches" - 4 servings

8 slices rye bread
Thousand Island Dressing or mayonnaise
4 slices Swiss cheese; halved crosswise
1/2 lb. sliced corned beef
1 cup rinsed, drained sauerkraut
Butter or margarine; softened

1) Spread bread slices with dressing. On each of 4 bread slices, place a half-slice cheese, 1/4 of the corned beef, 1/4 of the sauerkraut and another cheese slice. Top with remaining bread slices, dressing-side down. Spread outsides of sandwiches with butter.
2) In 10" skillet over low heat, cook sandwiches until browned on bottoms. Turn; cook until browned on other side. Cut each sandwich in half; serve at once.

Ruben Sandwiche

Ingredients

1 c thousand island salad dressing
1 c sauer kraut
1 cn corned beef (drained); (12 ounce)or sliced from a deli
10 oz swiss cheese or any kind.

Instructions

Serve on rye bread grilled in a skillet till lightly browned

A Ruben is nothing more than pastrami, sauerkraut, and Swiss cheese on rye bread. You could also add pepperoncini, lettuce, onion, and tomato. The sandwich is best if you warm the pastrami in a microwave first. And don't make one on a budget. Put 4 or 5 ounces of pastrami on it. The last controversy is should you use rye or dark rye bread? That's a matter of taste. I like dark rye.

REUBEN SANDWICH

8 slices pumpernickel bread
1/2 lb. German corn beef, sliced thin
8 oz. can sauerkraut, well drained
2 tbsp. Thousand Island dressing
4 slices Swiss cheese
5 tbsp. butter

Place corned beef, then sauerkraut, Thousand Island dressing and cheese on 4 slices of bread. Spread butter on outside of bread. Grill in skillet or griddle until browned and cheese melts.
