I have a few that need to be used but I am sick of just eating them raw. Ideas?

Persimmon Bread

Ingredients

2 c unbleached all-purpose flour
2 c whole-wheat pastry flour
1 tb plus
1 ts baking soda
1 ts salt
1 ts mace
1/2 ts cloves
4 eggs
1 c unsalted butter, melted
1/4 c honey
1 3/4 c brown sugar
2/3 c bourbon<<< 2 c very ripe persimmons, mashed
2 c chopped walnuts (black, if you can; find them)
2 c raisins

Instructions

Combine flour, pastry flour, baking soda, salt, mace, and cloves in large mixing bowl. In separate bowl, beat eggs, butter, honey, brown sugar, bourbon, and persimmons. Add liquid to dry, stirring just until moistened. Stir in walnuts and raisins. Pour batter into two loaf pans. Bake at 350 degrees for about an hour.

Fuyu or Hachiya?
Depending on which sort you have. If you have the Hachiya -- the sort that you have to wait till they get very soft before you eat them -- I suggest you freeze them. Then let the persimmon thaw a little and serve it for dessert. The inside will have the consistency and flavor of a good fruit sorbet.

PERSIMMON COOKIES

1 c. sugar
3/4 c. butter
2 eggs
1 c. persimmon pulp
1 tsp. baking powder
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 c. flour
1/2 c. raisins
1/2 c. nuts

Dissolve soda in the pulp. Cream sugar and butter. Add vanilla and beaten eggs. Sift dry ingredients together. Add with pulp. Then add raisins and nuts. Drop cookies by teaspoon on ungreased cookie sheet. Bake until puffed and golden brown, 350 degrees.

Oh Yea! Dice them as best you can then toss them in at the last minute of cooking pork chops with mango and cranberries! YUM!!!

try persimmon pudding its frickinn awesome.my mom makes it. she serves it warm with vanilla ice cream.

a pie...
but them is a saucpan with about 1/2 cup of sugar and a lil bit of water and stew them
then make a pie
