I'd serve it with a Thai salad and a Bahamian Maccaroni & Cheese.
For the Thai salad, stir fry briefly in vegetable oil with 1 clove of chopped garlic: 1 sweet pepper in julienne, 1 cup broccoli and 1 cup sliced green onions. This will give it all a nice garlicky flavor and scent. Cool off. Once cool, mix with fresh greens and soy sprouts. Garnish with roasted sesame seeds. Dressing: mix 1 tablespoon of peanut butter with a dash of hot water, 1 teaspoon of sugar, 1 tablespoon of soy sauce, 1 teaspoon of cider vinegar, salt, pepper, 1/4 cup of vegetable oil and the juice of 3-4 limes. Mix well and season the salad right before serving.
For the Maccaroni and Cheese (they serve this in The Bahamas a lot as one of the most popular side dishes): cook "al dente" 8 ounces of maccaroni pasta noodles. Finely chop one sweet pepper, 1 small white onion and nuke them in the microwave for 1 minute to soften them. Drain the pasta, add the peppers and onion. Shred one 8 oz pack of cheddar cheese and add half of it to the pasta when its still hot. The cheese will melt, yum. Mix one tin of evaporated milk with 4 eggs, season with salt, pepper, cayenne pepper and add to the pasta. Pour into a greased baking pan, cover with the remaining cheddar cheese and cook in a 350F oven for 20-30 minutes. Let it rest and cool off to set, heat it up before serving, it is delicious! I love to add 1 cup of sauteed slices mushrooms to this, it makes it even more delish and fancier.

Fried Onions, Cornbread Stuffing with Bacon Crumbles, Cold Corn salad (kernel corn, quartered cherry tomato,red onion, lime juice, cilantro, salt, pepper) and Cheddar Mashed Potato's. Serve with a nice Lager (sam adams or such). A dinner that no one will soon forget.
