In my family there are 7 people for which I make 3 cups of rice. 5 of the 7 are the rice eaters and normally there is still a small amount left over, therefore I'd suggest 2 cups max.

For two people I would say one cup of rice is plenty if you are using regular rice out of a bag. (one cup rice to two cups water).
If you are using instant rice, converted rice or some other rice product, check the serving recommendations and I would double what it says for two...

I like to make a little extra. We both love rice, and I want leftover rice to put in the fridge so I can make stir-fry the next day.

1 cup is probably enough. Maybe 1.5 cups if you both really really like rice. Rice is cheap, after all.

One cup of dry rice yields two cups of cooked produce. I generall make one cup for two people. If you're really hungry, do two. But three cups will yield six cups of cooked rice. That's way too much!!

1 cup dry or 2 cups cooked, UNLESS the chicken has gravy. Rice is suuuuch a good medium for good gravy....

2 should be sufficient, but if 1 or both of the guests are male it may be a good idea to work with 3 (especially if there's a chance that dinner will be a little late).
