It is due to the water eluate plastic compounds in the water - this is a very serious study and the theory is that because of all the plastics in the water its actually less safe than tap water.
Another reason for the sell by date is its a consumable which by EU laws they must have a sell by of best before so that they are guaranteed fresh or fit for consumption

Because it is now trapped in an oxygen free enclosed environment. Water that cannot move freely stagnates and goes off resulting in foul smell and taste. Furthermore, stagnation encourages the growth of bacteria and algae which are harmful to drink. So, having trapped the water you have to give it a sell-by date because you have changed its environment and therefore its freshness.

Because the water is moving and cannot therefore stagnate. Once it's bottled, it is trapped and cannot move which results in bacteria being able to grow and the water becomes impure.

water running through the mountains wasn't bottled then, only since it was bottled and in contact with machinery etc. a date was put on it in case of contamination perhaps.?????

Bottled water elutes material from its container, which will render it less satisfactory for drinking after a time. But it won't become dangerous -- it may just taste odd.

i'm with trudiev in this one. we've probably the cleanest water in the worldwide working freely from our faucets and a few idiots purchase gallons of bottled water to apply in the domicile?!?!?!? honest sufficient, purchase a bottle while you're out or something, yet jees!

I thinks its because plastic bottles eventually start to degrade and the chemicals start to pollute the waters purity.

because the bottles they are using are environmentally friendly and if you don't consume your water by a certain date the bottle will disintegrate and you Will be wet ...but you could still drink it
