Actually, eggs are kept in the cooler section in the supermarket. It just doesn't look like one. The shelves that hold eggs are created in a way where they do not require doors, instead cool air is blown around the egg cartons, which kind of creates an air pocket. The stores do this because it just looks better.

Also, stores usually keep eggs in a separate place than other cold items because they have a slightly different ideal temperature. So by keeping them in their own special shelves the store can keep the eggs at their ideal cooler temperature (instead of a colder temperature), and make it appear aesthetically pleasing.

Good question! Eggs shouldn't actually be kept in the fridge - a cool dry place is where eggs need to be stored. Just the same as where they are in shops. I noticed some answers say that shops have high turnovers of eggs, so they don't need to be kept in the refridgerated section - that isn't the case. They keep them there since they don't really belong in a fridge (or the fact that they can be stored in either, even if a fridge isn't the best place). Using the 'quick turnaround' theory, then milk wouldn't be in a fridge either. It is - in fact refridgerated items should be put on the shelf within 20 minutes of delivery/out of the backstore fridge. Maybe it is a legal requirement on egg cartons - you never know in these times.

When we buy a dozen eggs, we're not going to eat them all on the first day, unless you've got a large family. Most households in UK have two adults and two children, on average. Keeping the eggs in the fridge extends their shelf life by a few more days beyond a week to about ten days max.

Using eggs in cooking - avoid taking an egg straight from the fridge. Use eggs that have been brought back to room temperature where possible.

Are you sure -- I'd not shop there anymore! Some stores have open coolers or the cooler section with plastic sheets.

It may be that they are in the cooler rather than the colder, closed section for things like milk, etc.

You need to refrigerate them though.

I've yet to see a supermarket where they have anything that remotely resembles even a 'cool' unit - they are just stacked on ordinary shelves at a convenient place to catch customers eyes! As to the bit about refrigeration, I think it's that rather than saying something like "keep at room temperature" as this is open to such a wide range of possibilities

Eggs are kept in a display type of cooler. The air temp for holding eggs is 45 degree or lower. They are in a different section than meats because meats must be held at a lower temp(40 degrees or lower).

I'm not sure where you live, but every supermarket I've ever been to they're in the cooler. I've never seen them sitting out warm.

Eggs should not be kept in the fridge because;
1/ They pick up the taste of other articles in the fridge
2/ They need to be at room temperature to be used.
