I am a travel agent and do many destination weddings.
No matter where you decide to get married, PLEASE, do not try to do it yourself. Every major Caribbean destination/resort has a wedding planning staff - their services are invaluable - I've seen brides become terribly stressed that have not used a planner.
Now, on to the question you asked - the best place. If your guests are all adults (no one under 18 permitted) I would recommend any of the three Sandals resorts on St. Lucia. If you've got some kids in the mix, just forget about Sandals, but look at other resorts on the island. Other "favorites" spots are: Punta Cana (Dominican Republic), Riviera Maya (south of Cancun, Mexico), and St. Thomas, (US Virgin Islands). The big advantage with St. Thomas, is that is a US territory and if you get married there, it considered to be in the US!
The only other pieces of advice I would leave with you are #1) use a travel agent that has experience working with destination weddings and wedding planners; #2) a more "upscale" and "all-inclusive" resort seems to yield the best, easiest, most memorable results.

I got married at sandals Dunns River in Ocho Rios (Jamaica). It was easy and wonderful. They do everything for you and make a big party out of it.
Yes, kids can come for 1 hour to the ceremony, or you can schedule to stay at a Sandals and a Beaches resort, and kids are always welcoem at Beaches resorts.
Since Beaches and Sandals are owned by the same people they will work with you to split your stay, or accomdate your needs.
I highly recommend Sandals, but also check out Couples or the smaller resorts. I also recommend St. Lucia, where you get more nature/fun versus poverty and people.

If you are looking to have people come with Riu complex in Dominican Republic... or if going alone or with all couples Sandals Ocho Rios Jamaica - I prefer the DR

Mauritius isn't in the Caribbean, it really is in the Indian cean ont he contenint of Asia. in the caribbean there is the Bahamas and also you may want to stay in the Atlantis motel the position there's a mess of sutf to do. Cancun is likewise a sturdy position, Antigua and Barbados

Sandals is nice, but since they don't allow kids, the wife and I aren't going to be able to form our own opinions for another 16 years or so.

get help from a travel agent. they can get packages for you and give you options.
DA- Sandals have resorts that you can take your kids. Check out their web site.
