I want to try and incorporate them into my meals more often and I need ideas. Also, how do you tell an avacado is ripe in the grocery store?

I love to mix cut up smoked salmon bits into mashed avocadoes and eat them on whole wheat crackers.

I also like to use it in sandwiches....the mashed avocadoes (lightly salted and peppered) makes a great, healthy alternative to mayo

My friend pairs avocado slices with strawberries. It's supposedly good!

I eat them on salads, and make guacamole. The best way to tell if they are ripe is to squeeze them. Don't by them if the are still hard but you don't want to buy them to soft and mushy either. I find if the skin is a lighter green they not ripe yet and if the skin is very dark green they are too ripe. You want somewhere in between.

I like them chunked or sliced up in a salad. Preferably an Italian dressing on it.

Or just scooping it right out of the peel with a spoon.

If you're buying Hass, the dark pebbly skinned ones, they should just barely have a little give when you gently squeeze them. If you don't use it the same day, you can just pick up the firmer ones and put them in a paper bag on the counter for a day or two.

I almost always mash em up into guacamole. Ripeness is based on touch - if it's rock hard, it needs a couple days to ripen. If it gives slightly to the touch, it's ready. If it makes a dent, it's overripe.

I cut them in quarters and put salt on them. The firmer the better at the store, they get soft when they ripen after that and that's when you eat them.

I blend the avacadoes and make it into an ice drink.
