Cinnamon comes from either the Ceylon Cinnamon or the Cassia tree. Both trees grow in Asia, and the spice is the dried, ground inner bark of the tree.
Most cinnamon sold in America is from the Cassia tree. Cassia cinnamon is sweet and spicy.
The other type, more common in Europe and Mexico, is Ceylon Cinnamon. It is less sweet, and has a more complex flavor, with slight citrus notes.
