My mother always said that the skin was healthy, but now with the pestisides (even though they were more toxic back then ex DDT) I don't know if that is true. Are their significant vitamins in the skin that don't exist in the fruit/vegetable itself? Do the benefits of those vitamins outweigh the risks of the pesticides? On the same note, mom always said that breadcrust had more vitamins than the bread, is that true?

Yes, just wash it really well before eating it. Yes, there are vitamins and nutrients in the skins that aren't in the "meat" of the fruit/vegetable itself, such as fiber. As far as bread crust, I am not sure but I believe it probably has more fiber too.

washing should get rid of the pesticide.

for bread, there's no reason why the crust would have more nutrients. that doesn't make any sense. the dough is uniform, so it all had the same amount of nutrients when you put it in the oven. if anything, it should have less, because it comes into contact with more heat than the inside of the loaf and baking will take out some of the nutrients.

The answer is... it depends on the vitamins and it depends on the pesticides. The best answer is to buy organic fruits and vegetables and avoid the pesticides altogether.

At whole foods they have an organic fruit and veggie spray that you can use to clean your food before eating.
