Quick and easy Chicken and Vegetable Casserole
This is a quick one-pot complete meal for when you are in a hurry and don't have time to spend in the kitchen. This can be a little bland as is in the recipe, but can easily be spiced up however you like it!

2 cups hot water
12-16 ounces frozen broccoli or cauliflower or carrots (or other vegetable)
2 lbs boneless skinless chicken breasts, uncooked and diced
onion powder
garlic powder
salt
pepper In a large pot with a lid, pour in liquid, add the rice, and give it a little stir.
Layer the frozen vegetables on top of the rice, and the raw chicken pieces on top of the vegetables.
Sprinkle the chicken with onion powder, garlic powder, salt and pepper.
Cover, and bring to a boil Let boil for 3-5 minutes.
Stir, then reduce to med-high heat, and cook for 10-15 minutes, or until rice is tender.
Serve with bread and a salad and it'll be a hit.

Asian stirfry. It's healthy & light. Buy a bag of frozen stirfry veggie you like in the freezer section of the store. Buy a bag of frozen chicken breast. A can of cream of mushroom, cream of asparagus or cream of chicken. Make sure you have a bottle of soy sauce on hand and some instant rice. You'll also need some milk & cooking oil.
Defrost a couple chicken breasts in the micro. Cut them up into bite-size pieces & stir fry. Meanwhile, pour frozen veggies into a micro-safe bowl, and defrost in micro. When chicken is done, place in a bowl & set aside. After you take the veggies out of the micro, start cooking your instant rice in the microwave. Then stirfry your defrosted, drained veggies. Meanwhile, stir together your cream of soup, 1/3 cup milk & 1 tbsp soy sauce. Stir that into the cooked veggies along with the cooked chicken pieces. Heat thru & keep warm til your rice is done. Then serve hot over rice. Enjoy! :)
You can also find this recipe on some of the Campbells soup labels or their website -along with many others!
I also like Bisquick.com website. Check out their Impossibly Easy Cheesebuger Pie by typing that into the recipe-search. It doesn't make that much, tho. So I'd make two, as both will fit in your oven at the same time. It contains: Ground Hamburger, onion -or quick tip is to sprinkle 1TBSP dried minced onion ontop of the hamburger when placing it into baking dish, Bisquick, shredded cheddar (or whatever chez), milk & eggs. Good Luck!
Or Sheppard's Pot Pie is easy. Ground 1lb hamburger add to a square baking dish/pan, dump a drained can of corn over the top along with your favorite season salt & pepper, maybe some shredded chez, then just put prepared instant mashed potatoes over the top & bake til warm thru-out. This and a nice prepared bag of salad would do. Ranch dressing or Parmasean cheese tastes good on top of the Sheppard Pie. I personally like Ketchup on top of it, though! :-)

I'm a goulash queen... I love making meals in one...
You could take any form of meat (hamburger, chicken, sausage) cut them up in bitesize pieces and cook -- while that is cooking you can add egg noodles to boiling water and cook til done. Then add them to the meat you've chosen and add cream of mushroom soup w/milk and any vegetables you like.
This makes a hearty meal and can be served w/ garlic bread.

Shrimp Tostada's --
peeled shrimp (amount you'll need per tostada- 4-6), cooking oil,
avocado (or prepared no-tomato guacamole), Taco seasoning, black beans, cheddar cheese, lime juice, tostada shells, cilantro, green onion
Make guacamole - smash the avocado, add salt/pepper, limejuice, and sometimes a small amount of tequila! If using prepared guacamole, you'll still want to add a touch of limejuice or salt/pepper
Heat black beans with a little cheddar cheese in a small pan.
Cook shrimp by adding touch of oil in a pan, throw in shrimp, and generously cover with the taco seasoning (check and see if seasoning has tomato - if so, you can use chili powder and a touch of garlic powder). Cook shrimp until done (pink and tightly round)
On the tostada's add generous amount of guac. top with shrimp, cilantro and beans (or serve beans on side) and a little green onion. For the rest of you, you can also add tomato on top.

I would go with Cod, angel hair pasta, butter and Parmesan cheese and a veggie of your choice. Bake Cod 20-25 min at 350.
