It is def ok to eat. I would not hesitate to cook that and gobble it up! In the fridge, it probably took at least 2 or 3 days to fully thaw. You wouldn't eat something that was in your fridge for a week? You get all new food every week? I don't. I am 100% sure it's fine, providing it's been refrigerated the whole time.

Providing it remained in the original package and was not removed from the refrigerator for any prolonged amount of time yes it is fine to eat. If you open it and notice any off odor it was warmed at some point and is spoiled you will have to discard. Good Luck!

Even if it was sealed in a package, I wouldn't take the chance on eating it. After all , it's been sitting in your fridge for a solid week. I always have one rule when it comes to food."If in dought, CHUCK it out."!!!
