Ignorance. Not knowing something when you need to know it can cost you any amount, up to and including your life. That's why wise people feel about information the way other people feel about money: you should never pass up the opportunity to pick some when you have the chance, because you'll never know when you'll need it and no one can ever have too much.

Whatever it is, it probably tastes awful (e,g. champagne is sour, caviar stinks and is too salty, etc.). But the conoisseurs will tell you it's an "acquired taste." Funny, ice cream tastes great, isn't too expensive and nobody tells you that you have to like it. You just do.
