One of my son's favorites: Beef Enchiladas. Real easy.
Fry ground beef with onions, chopped green pepper and a garlic clove. Add a cup of salsa. Medium spicy is good. Place a good spoonful of beef mixture onto flour tortilla. Wrap it up and place side by side in a baking dish. Spread another cup of salsa on top of the tortillas (or a can of spaghetti sauce if you prefer) and top with lots of shredded cheese. (Any kind you like). Bake until cheese is melted and serve with salad.

I run into the same dillemma all the time, so i created a simple list of some of our favorite dishes and keep it on hand. Occasionally i add new ideas as new recipes turn up.
Since fall is almost upon us, I will suggest my favorite cold weather meal... chicken corn soup and hot rolls.
Homemade chili and corn bread is also great for a fall day.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.



Beef Stroganoff Soup
1/4 C. butter

1 lb. tenderloin tips cubed (you can use ground beef)

2 cloves garlic minced

12 oz. mushrooms sliced

1 large onion diced

1 C. shredded carrots

1 pint of water

1 T. beef base

Roux made of 1/2 C. butter and 1/2 C. flour

salt and pepper

1 pint of whipping cream

1/2 C. sour cream

1/4 C. chopped chives

In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.

Add mushrooms and onions. Saute until onion is translucent.

Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.

Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.

Ladle soup into bowls and top with chives.

Makes 6 - 8 servings.




Chili with Cheesy Cornmeal Dumplings

12 ounces lean ground beef
1 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves, finely minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 1/2-ounce) can dark red kidney beans, rinsed and drained
1 (14 1/2-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
1/2 cup water
Cheesy Cornmeal Dumpling (recipe follows)
In a large saucepan or Dutch oven, cook ground beef, onion, bell pepper, and garlic until meat is brown and onion is tender. Drain fat. Stir in chili powder, cumin, salt and black pepper and cook for 1 minutes. Add the beans, undrained tomatoes, tomato sauce, water. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes.
Drop Cheesy Cornmeal Dumplings by tablespoonfuls onto simmering chili. Cover and simmer about 20 minutes more or until a wooden pick inserted into dumpling comes out clean.
Makes 4 servings.


Cheesy Cornmeal Dumplings

1/2 cup all-purpose flour
1/2 cup (2 ounces) shredded cheddar cheese
1/3 cup yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 large egg, beaten
2 tablespoons milk
2 tablespoons vegetable oil
In a medium mixing bowl stir together the flour, cheese, cornmeal, baking powder, salt and pepper.
Combine egg, milk and oil; add to flour mixture. Stir with a fork just until combined.
