I place the carcass (broken up if possible) into a stock pot and cover with water.
I bring this to a boil, then lower heat and simmer until the bones are stripped and the broth has reduced to the amount of flavor I want.
I then cool the broth and strain, discarding any solids.
I pack the broth in freezer bags (usually 2 cups per bag) to use later.
Note that I do not season my broth since I use mine for different types of broth. Afterwards I will season with eith a combo of carrot, celery and onion or a combo of fresh ginger and lemongrass. But if you only use one type it is easy to season before.
I also save chicken bones that haven't been served on a plate, as well as fish bones, beef bones, pork bones, and shellfish shells in the freezer until I have enough to make a pot of broth then I prepare that in much the same way as the turkey and freeze it for later.
I found that once I made a habit of this (weren't all those famous chefs pleading with us to do this for years?) I have plenty of broth and don't have to resort to using the canned stuff, which obviously tastes no where near the quality of home made.

TURKEY FRAME SOUP

turkey carcass
6 quarts water
1 cup celery, and leaves chopped
3 large onions, chopped
1 tablespoon salt
1/2 teaspoon pepper
1 cup carrots, chopped fine
4 cups medium egg noodles
3 cups frozen peas
In large covered kettle place turkey cage, bones, S& P,carrots, celery plus half the onions in water.
Simmer 1 hour.
Remove the turkey parts and let cool.
Pick the turkey meat and discard bones.
Add turkey, remaining onions and cook ten minutes.
Add noodles to soup.
Simmer until noodles are tender.
Add frozen peas to hot soup and serve.

I add the following:
1 onion, chopped
1 or more stalks of celery, sliced (I'm not a big celery fan, but it gives good flavor)
2 or more carrots, sliced
4 oz sliced mushrooms
a couple shakes of poultry seasoning
salt and pepper to taste.

Simmer until any meat falls off the bone (an hour maybe? I don't usually time, lol) then fish out the bones. Add noodles, rice, or dumplings
and simmer them 'til done. If you need a little more flavor at the end you can throw in a chicken bullion cube or two.

Put the entire carcass into a large kettle of boiing water with some salt and pepper and boil until all the meat falls off the carcass. Take out the bones and dscard add in onions, carrots, celery, potatoes, your favorite pasta noodles and more of your favorite seasonings to taste. Cook until veggies and noodles are tender. Enjoy!

In a large stock pot, put the cut up turkey carcass and cover with water. Add two celery stalks, cut up as well as 1 medium onion, diced. Boil until meat falls off the bones...usually about 1 hour. Remove the bones and remove any meat left on them. Return meat to broth. Add salt and pepper to taste. Add noodles and cook until done. Congrats, you've made turkey soup.

Pressure Cooker-Fastest and gets the most amont of flavor.

Break carcace up and put in Pressure cooker-Make sure that the strainer is in there (easier to clean).

Cover with water-about 1 inch from top of bones. Add 2 onion quartered (note-if you want a golden color to your stock-leave skin on), 1 large carrot-diced-3 stalks of celery-large dice, 1 bay leaf, 3 springs of thyme-1 sprig of oregano-about 3 tbs gumbo file (you can pick this up at your grocery store in the seasoning isle) Cook on high for 45 minutes-Take strainer out and add meat back to the stock. If you want noodles-I suggest you boil seperately and add to later as the starches from the pasta will thicken your soup and make it cloudy. This would also be a good time to add what ever vegetables and additional seasoning you want.

Cook your turkey bone. Chop up onions, garlic ,celery,potatoes,carrots,1-can diced tomatoes,any left over veggies.Cook bones until the meat comes off the bones.Take the bones out and put all other ingredients in the pot to cook.Make you some cornbread muffins and serve Dinner.
