I just discovered today while cleaning the crisper, that I have THIRTEEN lemons. I used one to make salad dressing, and will use one more for hollandaise. I need ideas on how to use these up in the next couple days. I don't need recipes, just ideas so I can look those up myself.

PLEASE DON'T SAY LEMONADE!

Well, you say no recipes so I'll just give you a heads up. Diane Sawyer on GMA a couple of years ago had a recipe for a Shaker Lemon Pie that sounded really interesting and it called for quite a few lemons sliced very, very thin. You can probably find it on the Good Morning America web site or even just searching "Shaker Lemon Pie" on the web.

Make lemon juice.. then freeze little cubes of them in ice cube trays so you won't have to make lemon juice next time you need it for something. Also, it doesn't need any perservatives as Lemon's are full of Ascorbic Acid (vitamin c) and that is a preservative in itself. So it'll last a long long time.

Other ideas:

*Chicken or fish in lemon sauce
*Lemon Merengue
*Lemon Mousse
*Lemon Tarts

I'd zest them, then juice them. Put the zest in a zip top bag and freeze for use in cheesecake, muffins, etc. You can pour the juice into ice cube trays and freeze, then transfer the cubes to another zip top bag. 1 medium lemon equals approximately 1 tablespoon of lemon zest and 2 tablespoons of lemon juice. And you can make lemon bars for dessert for tonight!

Take a few of them and grate the peel for lemon zest for freezing and later use in recipes and drinks. Also squueeze the juices and freeze the lemon juice for subsequent use too.
