My company is having a dinner party and they have these three different dinner entrees to choose from and I don’t know anything about any of them! Please help!
1) Herb Crusted Chicken, Natural Au Jus (I like chicken but will this have any taste because it says natural?)
2) Maple Glazed Atlantic salmon with Rosemary Cream Sauce
3) Grilled Filet Mignon with Honey Roasted Shallots and Port Wine Reduction (have no idea what roasted shallots and port wine reduction is or are, whatever the proper grammar is)
And another question, if I get wine with any of these entrees, which kind should I get. I know some wines are better with certain entrees. Thanks!

1. Herb Crusted Chicken Natural Au Jus, is just want it sounds like. Its chicken "breaded" w/herbs, in natural juice.

2. Maple Glazed Atlantic Sal,on w/rosemary cream sauce, is salmon brushed w/maple, keep in mind maple is kind of sweet. Cream sauce is usually made w/heavy cream.

3. Grilled Fillet Mignon w/honey roasted shallots and port wine reduction. Fillet (in my personal opinion is the best cut of beef on a cow and the most expensive) shallots are kind of like a green onion and port wine reductions, just means wine that is cook a little longer and it turns into a sauce.

When choosing a wine, I have heard that you for white meat you should have a white wine. And for red meat it should be a red wine.

I hope this helps just a little

The chicken meal sounds good. The Natural Au Jus just means that the sauce is all natural no artifical flavorings or such. It is a good clear sauce with no milk or cream added to it.

The Grilled Filet Mignon meal also sounds good. Shallots are a type of onion, some call them green onions but that is not quite correct. The Port Wine Reduction is where they take a port wine (a type of wine) and cook it until the liquid reduces down to a thicker sauce. This is non alcoholic and very flavorful.

As far as wine goes, I always get whatever wine I like. I don't follow the rule of red wine goes with meat and white with chicken and such. I just pick one that I enjoy drinking and drink it. If you like all kinds of wine then just pick your most favorite and go with it. Remember you are the one that has to drink it not someone else.

Enjoy your dinner party.

Au Jus is a type of sauce darlin, it will still taste just like chicken.

Maple glazed is just that, it's glazed with maple syrup tasting sauce. I assume you kno what rosemary is?

Shallots are a type of onion I believe and reduction is also a type of sauce the meat is cooked in.

Wine with the filet mignon should be a merlot or red wine. With the salmon I suggest a nice Pinot grigio and same for the chicken. Hope this helps!

I think the filet mignon sounds very yummy. Roasted shallots are roasted onions. Port wine reduction does boggle me. Maybe a sauce that it's marinated and cooked in? You should probably get a red wine with the filet mignon. God luck with making your choice. All of it sounds delicious other than the salmon (yuck) LOL.
