There are very many fine upscale critically acclaimed restaurants in the Bay Area and Napa Valley. Many formally trained chefs are either moving from the Valley to the Bay, or vice versa. Thomas Keller has 3 restaurants alone in Yountville.

I don't know about the process, but this area has the most wonderful food and high-end names to work for.
