Teriyaki Salmon (YUM)!!
Marinate your filets in a thin teriyaki sauce for about 1 hour. Then broil till they're about 1/2 done. Then baste with a thick syrupy teriyaki sauce and complete the broiling. Salmon is done when the flesh flakes all the way through but don't let it overcook and dry out.
The thick teriyaki sauce sugars may blacken in the process however, it's still delicious. My family says it's better than candy.

Slamon tastes wonderful blackened! If you can get an excellent blackeneing seasoning, buy it. I have a mix here if you don't have one!
Blackened Salmon
Blackened Mix:
2 cups Italian bread crumbs
2 tablespoons Italian herb mix
1 tablespoon garlic chopped in olive oil
1/4 tablespoon paprika
1 tablespoon chopped fresh parsley
2 tablespoons blackened red fish mix
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese
Dijon Sauce:
1/4 teaspoon chopped fine shallots
1 tablespoon butter
1/4 cup white wine
1/4 cup fine Dijon mustard
Pinch paprika
Balsamic Sauce:
1/4 teaspoon chopped fine shallots
1 tablespoon butter
1 cup balsamic vinegar
1 cup veal stock
1/2 teaspoon fresh rosemary, chopped if desired
---
2 pounds cleaned spinach
2 tablespoons olive oil
3 cloves garlic (peeled)
---
8 (10-ounce) salmon fillets
---
For the Dijon sauce, saute on medium heat 1/4 teaspoon chopped fine shallots and 1 tablespoon butter. Then add 1/4 cup white wine, Dijon mustard and a pinch of paprika. Simmer for 3 minutes.
For the balsamic sauce, saute on medium heat 1/4 teaspoon chopped fine shallots 1 tablespoon butter. Then add balsamic vinegar, veal stock and 1/2 teaspoon fresh rosemary chopped, if desired. Bring to a boil and reduce by 1/2 or until it coats back of spoon.
Put 2 tablespoons olive oil and 3 cloves of garlic (peeled) into a hot saute pan and saute until brown and then add 2 pounds cleaned spinach.
Mix all blackened mixture ingredients together in a blender. Coat salmon fillets with mixture. Saute on each side 3 to 4 minutes over high flame. Place in a preheated 400 degree oven 6 to12 minutes, or to your liking. Serve with sauces and spinach.

This is my best Salmon recipe....I live in the Pacific NW, so I've tried tons, and this is my patented favorite:
CEDAR PLANKED SALMON
PREP:
purchase cedar plank for grocery store...email me if you need to order online
soak cedar plank in water for at least 30 minutes
1 cup of butter
1 envelope of good season's italian dressing
1 cup of wine
combine the above ingreients and marinate the salmon for at least 30 minutes (skin side up) Continue to baste samon with the marinade, but watch for flare-ups on the grill, because of the high fat content;)
place salmon on plank skin side down and BBQ for about 40 minutes, or until flesh is light pink and flakey
for the last 5 minutes of BBQ...place approx 1/3 cup of brown sugar in a thin line down the middle of the salmon
DEEEELISH!!
p.s. if you really like garlic, you can add 2-3 cloves of chopped garlic to the marinade

This is our family favorite and it only requires 3 ingredients besided the Salmon :)
Cut the salmon into portion strips and create a foil boat for each serving.
Coat the salmon fillets in a thin layer of dijon mustard and then fill the foil boat with balsamic vinegar.
Broil until nearly done. Remove from oven and drain juices from each foil boat.
Coat Salmon steaks with honey and return to oven until honey is bubbly and salmon flakes with a fork.....it will still be pink BTW.
