As a rule, 1/2 cup of most vegetables equals one serving of vegetables, 1 cup of leafy greens equals one serving of vegetables and 3/4 cup of vegetable juice equals one serving of vegetables. Generally, a regular salad (like one you would get at a restaurant or for takeout) contains 2-3 servings of veggies, depending on how big it is.

they say it how many portions you eat not how much you eat in one go, as the human body don't store vitamin c, you are supposed to eat 5 portions of fruit or veg a day
