Should I give a starch and veggies, or just veggies? The pastry will be a seafood wellington-esque thing with a creamy sauce.

Personal preference here! With a savory seafood item with a cream sauce (which, by the way, sounds fantastic!), I think I would do a simple steamed veg with a simple squeeze of lemon juice.

Broccoli, broccoli and cauliflower, carrots and cauliflower, perhaps a medley with some pearl onions and peas. Think 'color' as much as contrast in flavor.

Since you have the puff pastry, I think that a starch would be overkill. I don't even know what sort of rolls or bread product would go with this.

Sounds like a nice white bordeaux or a pinot grigio (if you are a wine fancier), and you're in business!

If you do a starch, I'd stick with a potato. Rice, although a compliment to seafood, seems a contradiction to the puff pastry. What about a roasted vegetable medley with some new potatoes, asparagus, carrots, pearl onions, cherry tomatoes and bell pepper chunks? Roast them in olive oil and fresh herbs (like maybe thyme and rosemary) at a high temp. This would make starch lovers not feel cheated without overdoing the carbs.

veggies. maybe some steamed asparagus or broccoli in a little butter with a lemon wedge or something to balance the heavy wellington. you could serve a soup as a first course if you feel a salad would make the meal too light. you could serve a starch if you really wanted to. i would suggest something lighter like rice.

I would recommend not serving a second starch, however, rice would be your best option if you wanted to serve one. A mix of wild and long grain would work best. I would serve a fresh spinach salad with sliced strawberries and a lemon vinaigrette or a poppyseed dressing. The lightness of the spinach and the tart sweetness of the fruit will offset the heavyness of the pastry and the salmon, both of which tend to be heavy and fatty. If you wanted to serve a warm vegetable, I would recommend green beans with lemon and pepper for the same reasons.

Typicaly when I serve a wellington I will serve a light starch and veggies and skip the dinner bread

Sautee a generous portion of french cut green beans with a little garlic and olive oil.
Or serve a light creamed spinach.
Steamed carrots would add some color to the plate.

I would make up a higher carb veggie and a low carb veggie to go with it. If not that then fruit cup or some such and a salad or a couple of salads.
