Caramalized Chicken
Ingredients
2-3 Bonelss Skinless Chicken Breasts, halved into strips
1 Large onion
1/3C Superfine Sugar, or regular Sugar
1/3C Chicken Broth
Thyme In the spice jar
Sage In the spice Jar
Lt. Buuter or Margarine
Brown your (salted) chicken in a non-stick skillet with some light butter or margarine. Set Aside. Add some butter to the pan and add onion wedges and sugar to the skillet. Allow the onion to cook until soft/firm. Add chicken broth and let reduce. Add thyme and sage to the pan in desired amounts and then retrun the chicken to the pan cooking until juices run clear.
Serve over rice (if there is enough broth left) or mashed potatoes and peas.
I can make this dish in 15 minutes flat.
SALMON
salmon fillets
dijon mustard
balsamic vinegar
honey
create a foil boat for each salmon fillet. coat the fillets with the mustard and fill the boat with the vingear. Broil until almost done. Drain juices, coat with honey and place back under broiler until bubbly.
A HIT....even with a man who hates fish :)

This Campbell Kitchen website by Campbell's Soup has some great recipes and many of them are less than 30 minutes prep and cook time. Take and look and see what you like, but here is one of my favorites: Campbell's 15-minute Chicken & Rice Dinner From: Campbell's Kitchen Prep/Cook: 15 minutes Serves: 4 Ingredients: 1 tbsp. vegetable oil 4 skinless, boneless chicken breasts 1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free) 1 1/2 cups water 1/4 tsp. paprika 1/4 tsp. ground black pepper 2 cups uncooked instant white rice * 2 cups fresh OR frozen broccoli flowerets Directions: HEAT oil in skillet. Cook chicken 10 min. or until browned. Remove chicken. ADD soup, water, paprika and pepper. Heat to a boil. STIR in rice and broccoli. Return chicken to pan. Sprinkle additional paprika and pepper over chicken. Cover and cook on low heat 5 min. or until chicken is done. TIP: *For creamier dish, use 1 1/2 cups rice.

Buy some bagged salad mix, toss on a few tomatoes, some sliced onion, a cucumber, some black olives, some grilled chicken breast and a sprinkle of feta cheese. A little greek dressing (or even oil and vinegar) and you have a healthy Greek Chicken Salad.
If you don't like the greek idea, any combination of ingredients and dressings with chicken and salad will work!

Balsamic Lemon Chicken
1/2 cup olive oil
1/4 cup lemon juice
2 Tbsp. balsamic vinegar
1 tsp. lemon zest
1 Tbsp. dry basil
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
4 whole boneless chicken breasts, halved
Mix all ingredients and pour over chicken. Broil in 9x13” pyrex dish for 15 minutes each side. Lest rest 10 minutes, slice in strips.

chicken breast with brown rice adding whatever vegetables you want I recommend cucumber in there also. Don't boil the chicken fry it in a pan adding oregano, paprika, cumin. After everything is done if you want to add extra flavor use Samurai Sam's Teriyaki sauce there is nothing else like it. If you want to stay on the healthier side adding lemon juice works good too.

Steam Barramundi with ginger and shallots.
Just steam the barramundi with the ginger and shallots, put some soy sauce and sesame oil.
You can also steam some green chinese veges along the side.
