I went to a restaurant last night and had the most beautiful stuffed butternut squash. I know nothing of this veg though I have made soup with it before. The squash was stuffed with stilton, mushrooms, peppers....but that is as much as I know. I wish I could make it myself but am at a loss at where to begin.

I would love some info on this lovely veg and if you can give me any recipies I would love that too.

I tried this for the first time last week. but roast, with other veg but you can slice it lengthways, scoop out the seeds in the middle, and put it in the oven to roast (did the restaurant peel the skin prior to cooking?) - make the stuffing with peppers etc. There was probably herbs included, wonder what they were? However, you can cook the mushrooms and peppers in a little olive oil. when lightly cooked, crumble in the stilton. (wonder if a tad of grated fresh ginger will add to the flavour).

When the squash is almost cooked take out of the oven, top up the filling and pop it back into the oven for a short while. That may work. Might try it myself.

Butternut squash soup is my known soup. in simple terms decrease up an onion, a small potato, 0.5 a carrot and about 2 handfuls of chopped butternut squash, cook dinner in 2 pints of vegetable inventory until eventually gentle. Then put in a food processor and howdy presto - a good looking comfortable soup which serves about 3 or 4 people. I in many situations devour it with bread to make it extra of a meal.

I love butternut squash. I usually slice it into pieces, remove the seeds (you can fry the seeds with a little salt and make them into popcorn flavoured snacks). I then baste them with a mixture of chilli, garlic and salt and olive oil and put them in the oven for half an hour. They are soooo tasty. You can just roast them though. Cut them in half and fill the cavity with fresh orange juice (keeps it moist) and bake for half an hour to 45 minutes - enjoy. They're great with a roast.

i have it a lot when i do roast veg, just select the veg you want add garlic, parsley, coriander, olive oil and season before roasting
gas 5 for about 45 mins

Start out by cutting squash in 1/2, gut them , put 1inch of water on cookie sheet flip cut halves upside down on sheet (as to steam) cook on 325" for 25 min. in oven.
Stuffing:: 1/2 hamburger, 1/2 mild sausage, mushrooms, peppers, onions, diced tomatoes(canned, pref. Italian) Italian bread crumbs, and egg (to form) salt, pepper, Italian seasonings(basil,parsley,oregano)
Then stuff squash and bake in oven 350' for 1hour(till brown on top take out sprinkle with Italian spice and Parmesan cheese for garnish..

cut in half and scoup out and chop what you took out chop other veg of your choice, and place them all in the butternut squash cases, place in the oven for 30 mins

I generally just roast it on it's own-I love it!! But after reading what you ate at the restaurant,I think it's time to experiment with it a bit!

I love it finely chopped and roasted in live oil with onions, red and yellow peppers and courgettes. I also like it as a curry - see recipe in link below....

My mum usually roasts them and mixes them up with the roast potatoes..

Im sure she's mashed them too..

but yeah, it's lovely roasted...

I'd definitely like to try it how you described it.

maybe you should try ukfoodtv's website because I'm sure I've seen a peculiar recipe done on that

I like to grill it with some onions, cilantro and parmesan cheese. Yum!
