Batter Fried Onion Rings

1 cup flour
1/2 teaspoon salt
6 large onions, peeled and sliced 1/4 inch thick
1/2 cup milk
1 teaspoon sugar
1 egg, well beaten
1 tablespoon melted shortening
vegetable oil (for frying)

Cover onion slices with cold water and let stand 30 minutes.
Remove to paper towels and press to dry.
Separate into rings.
Combine flour, sugar and salt.
Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
Remove and drain on paper towels.
Serve immediately.

1 cup buttermilk
1/4 cup hot sauce
1/4 cup Essence, recipe follows
2 large yellow onions, peeled and cut into 1/8-inch thick rings
2 cups all-purpose flour
Peanut or vegetable oil, for frying

In a bowl, combine the buttermilk with the hot sauce and 2 teaspoons of Essence. Add the onion rings and press to coat. Marinate, covered, in the refrigerator for at least 1 hour.
In a medium pot, heat the oil to 360 degrees F.

In a shallow bowl or large dish, combine the flour with 2 tablespoons of the Essence. Dredge the onions in the seasoned flour, coating each ring evenly. Shake off any excess flour and carefully place the rings in the hot oil. Fry until golden brown, turning to cook evenly and prevent sticking, about 3 minutes per batch. Remove from the oil and drain on paper towels. Season the fried onion rings with Essence, and repeat with the remaining ingredients.
Serve hot.

Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.

Yummm. Try this recipe:

Beer Batter

Ingredients
1 12 oz can light Beer
1 1/2 cups Flour
1/2 tsp Salt
1 tsp Paprika
1 cup Flour

Directions
Slice and separate onion. Spread rings on a platter and lightly salt. Let sit for about 15 minutes, until they are slightly moist. Pour the beer into a large bowl. Sift the flour, salt, and paprika into the beer, whisking until the batter is light and frothy. (The batter may be used immediately or stored in the refrigerator for up to 1 week, but be sure to whisk it occasionally). Heat at least 2 inches of oil in a frying kettle or electric fryer. Dredge onions in plain flour, then in beer batter. Cook onion rings at 375 for about 2 minutes on each side, until golden brown.

This is a good recipe. Just don't forget to flour the onions first before battering them... it helps the batter stick!

Most Grocery stores carry a package called onion ring batter. Look in the produce section. Cut the onion thick and follow the directions on the package.

Get huge soft-ball size yellow or white onions. Cut in 4 huge slices. Soak them in evaporated milk. Dip the soaked rings in either seasoned self rising flour OR self rising cornmeal. Fry them up in oil that has been heating on medium to medium high. I like using peanut oil.

You can make a nice semi-spicy dipping sauce by combining 2 parts mayo to 1 part sour cream. Add salt, pepper, hot sauce, garlic powder and chili powder. All of the above seasonings can be adjusted to suit your taste as long as you start with the 2 to 1 ratio of mayo and sour cream. Enjoy!

"French Fried Onion Rings" - 3 or 4 servings

1 large Spanish or Bermuda onion
2/3 cup milk
1/2 cup all-purpose flour
3/4 tsp. baking powder
1/4 tsp. salt

Peel onion; cut into 1/4" slices and separate into rings.
Heat fat or oil (1" deep) to 375* in large skillet. Beat remaining ingredients with rotary beater until smooth. Dip each onion ring into batter, letting excess drip into bowl.
Fry a few onion rings at a time in hot fat about 2 minutes or until golden brown, turning once. Drain.
(If using self-rising flour, omit baking powder and salt.)
NOTE: To keep fried onion rings warm, place in 300* oven until ready to serve.


"Beer-Batter Fried Onion Rings" - 6 servings

1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
2/3 cup beer
Salad oil
1 large onion; sliced and separated into rings
Salt

1) In medium bowl, combine first 5 ingredients and 1 tsp. oil. With wire whisk, beat until smooth. Cover; chill at least 2 hours.
2) About 30 minutes before serving: In 4-quart saucepan, heat 2" oil to 375*. Dip onion rings into batter; fry a few at a time until golden. Drain on paper towels. Sprinkle with salt; serve immediately.

3 large Spanish or Bermuda onions

heat oil in pan to 375 degrees, put all ingredients together (except oil) together until smooth
Dip each ring in batter deep fry and enjoy. my advice use a deep fryer it may take more oil but you come out with evenly cooked union rings easier than in a pan.
