I love eggs in the dressing, but the main reason that I exclude them is the fact that the dressing will keep longer after Thanksgiving if you don't put eggs in. I usually make deviled eggs to cover that need anyway.

I'm from south Texas and my family has always put chopped boiled eggs in our cornbread dressing.

Sauteed onions & Celery, the broth from the cooked turkey, two loaves cornbread crumbled, chopped boiled eggs, and the seasonings.....

A classic southern turkey dressing :)

Growing up in NJ my family alsways put in a few raw eggs into the stuffing mix as it acts as a moisturizer and keeps the stuffing from becoming too dried out.

My husband's side of the family does, they are Texas born and raised.
My family never has, and they are from Yankee territory.

ABSOLUTELY! both sides of my family do it. an old boyfriend told me that it's a weird yankee thing, but we've all lived in texas our whole lives, so i'm not sure where he got that idea.
