Brown steak for seconds in hot pan for seconds only, add back the onion mixture and and stir in the cream. Add some salt and freshly chopped parsley. Serve with rice or chips.

Zesty Beef Marinade
Zest and juice of one lemon
1/4 cup soy sauce
1/4 cup worcheshire sauce
1/8 cup EVOO (extra vigirgin olive oil)
1/8 cup seasame oil
dash lemon pepper
4 cloves garlic minced
1 tbsp flavored vinegar (i use garlic rice wine vinegar)
minced green onion
Just mix this up and soak your steaks in it for at least 1 hour. if you want to serve it over rice, then pour the marinade in a sauce pan and bring it to a boil and add about 1/3 cup chicken or beef broth and thicken with some cornstarch for a gravy.
Cut the steaks diagnoally after they have rested and serve the strips over rice with the sauce as a garnish.
This dish is cooked either on the outside or indoor grill and takes under 30 minutes to prepare from start to finish, excluding time to marinate.
Good Eating :) Blesings and Peace this Christmas!

GRILLED RIB-EYE STEAKS WITH PARSLEY-GARLIC BUTTER
The garlicky herb butter is similar to the butter served with escargots in southwestern France. IMPROV: When preparing the butter, try a shallot instead of garlic, and thyme instead of parsley.
For the Parsley-Garlic Butter, mix together in small bowl, then cover and chill:
1/2 cup (1 stick) butter, softened
1 tablespoon finely chopped fresh parsley
1 tablespoon chopped fresh chives
1 garlic clove, pressed
2 teaspoons Cognac
Salt and pepper
Prepare barbecue (medium-high heat). Rub with generous amounts of salt and pepper:
3 1 1/2-inch-thick rib-eye steaks (about 1 pound each)
Grill steaks to desired doneness, about 6 minutes per side for medium-rare. Cut each steak in half, top with spoonful of chilled butter, and serve.
Makes 6 servings.

Fry your fillet steak until its 5 Min's from being ready.
Before... Prepare large open mushrooms (peel top skin etc)
Prepare a mixture of lemon juice from a fresh lemon and grate some of the skin into the juice
Add two crushed cloves of garlic to lemon juice
Add 10ml of olive oil to lemon
Add couple of drops dark soy sauce to liquid
Take a bunch of thyme and de-leaf 2/3s... add leaves to liquid
mix liquid
Place mushrooms top downwards on a tray and pour a little of each liquid into the the mushrooms... add the rest of the thyme to the mushrooms.
Place mushrooms in oven @ 150C twenty Min's prior to fillet being cooked.
when fillet and mushrooms ready... take mushrooms off the tray
Place fillet on the trays and place the mushrooms on top
Now slice thin slices of taleggio cheese over the top
Place tray under grill and grill for 10 minutes until the cheese melts into the mushroom and fillet ... serve with whaterver you like
