It is natural that we feel guilty. There are lots of yummy recipes for leftover ham and turkey. Try allrecipes.com for a start. As far as salad and casseroles they are getting to a point where they are no good anyway. Same for stuffing. Maybe if you cook the dinner you can make notes on what you had leftover and tweak the amount you make next year. Also if you have people over for dinner have them take leftovers home. Also you can always do a "leftover buffet" on Friday or Saturday night. Some good wine and leftovers taste really good!!

if you have the guilt - you can re freeze food that have not already been frozen.
also - you can dice up leftover turkey and make turkey salad by adding some mayo, chopped celery, etc. to try a different way to eat the leftovers.
BUT - no - you should not feel guilty about tossing.
certain food should not be kept too long anyway and the true value of the food was the night you served it. Any leftovers are bonus you get to achieve value with.
go toss it - 359 days to next turkey day.

Yes I do feel guilty when I have to throw food out. I am lucky to have two dogs that eat table scraps, so I can at least utilize the leftovers that way. Turkey can be frozen for later use. I use the Foodsaver bags - when you vacuum seal the bag, it will keep for a long time. Then you can break it out for turkey sandwiches later. Turkey salad (made like chicken salad) is delicious.

Definitely freeze as much as you can. I had to throw some of my T-day food out, but I saved as much as I could in the deep freeze. You never know, 2 weeks from now you could get a major craving for mashed potatoes!

No I threw the bird away with meat still on it. Just the smell of the turkey alone made me want to puke the next day. Good riddance Thanksgiving!

I slice my white meat, and freeze it. Perfect for sandwiches. The dark meat, I cut it into chunks. I either make a big pot of turkey noodle soup and freeze individual portions, or I freeze the turkey. It is good for up to 6 mos in your freezer.

Actually I put a lot in the freezer on Thursday & leave just enough out for the weekend.
The stuff that I can't freeze (salad) goes in the compost pile or out for the animals.
Good luck, it is hard planning for the big days because everyone overcooks . . .

Some worry about liability. There are groups such as Second Harvest that will go and pick up edible food from restaurants and redistribute it to shelters. Big supermarkets donate baked goods as well.

I feel very guilty when I throw away food. Unless I know for sure it may harm my health, I will not throw out food.
