I drink three cups of coffee every morning, and three diet pepsi's every afternoon. If I don't, I get tired and irritable.

I want to be able to enjoy one cup of coffee in the morning and one diet pepsi with lunch, and be done with it.

How can I accomplish this and not feel tired and irritable all the time?

From one to two cups of coffee it's OK, but diet Pepsi is not a healthy choice at all. If you really need the caffeine, you should avoid diet coke drinks and perhaps try different caffeine drinks, like red bull or guarana (there are also chocolates with guarana, which give you as much energy as 5 cups of coffee, so don't eat too much of that, even tough they sure are delicious).

Besides that, have you tried changing from coffee to tea? White tea from Tetley is delicious. There's also the classic, English or Chinese black tea, and the extra energy tea, green tea. To all of these you can add a bit of milk in the morning, the taste resembles latte.

As it has already been suggested, if you don't eat enough calories you will feel less energetic, no matter the time of the day. Bananas are a good choice, chocolate as well, bread with jelly or marmalade (jelly/marmalade: fast sugar; bread: slow sugar) will also help you fell better in the morning or afternoon.

Caffiene addiction is a strong one. It's also really hard to break.
I suggest cutting back little by little each day. As much as it sucks, you still are going to go through some caffiene withdrawl; esp. if you are so dependent upon it.
Understand though that cutting back won't be a cure-all for your getting tired and irritable. You need to learn how to deal with it until you adjust to smaller levels of caffiene.

Slowly wean yourself... start by adding some decaf to your regular, then slowly add more decaf and less regular.. eventually you'll be drinking more and more decaf until you cup runneth over.. Good luck!

Also.. try eating somehthing that will increase your energy levels in the afternoon... like trail mix or fruit like bananas.
