Chop in some onion and garlic and fried bacon bits and make into patties and fry in butter. Great!

as Mashed potatoes, just alter the composition some, add grated cheese and/or crushed garlic.

Make potato cakes and fry them for breakfast with eggs.
Add a bit of flour to your left over mashed potatoes, form into a pattie and fry (yum)

If you can't decide, pop 'em in the freezer. You never know when that sudden mashed potato craving will hit! I'm serious, that's what I do. Can't let those go to waste!

Make potato soup.
2 teaspoons olive oil
1 cup diced onion
1 cup diced celery
6 cups reduced-sodium chicken or vegetable broth
2 cups mashed potatoes
8 ounces shredded Cheddar
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 teaspoon dry mustard
Hot sauce, optional
Add oil to a large pot set over medium-high heat. Add onion and celery and saute for 2 to 3 minutes, or until they start to soften. Add stock and mashed potatoes and bring to a simmer.
Using a hand blender or regular blender, puree soup until smooth (when using a regular blender, work in batches to prevent messy cleanups!). Add Cheddar, salt, white pepper, dry mustard and hot sauce. Stir to combine and allow the cheese to melt.

Add a small amount of garlic powder or garlic salt to the left over mashed potatoes and make small patties out of these potatoes, place them in a heated cast iron skillet (previously treat the skillet with salt and cooking oil and then rinse thoroughly, do not use soap on a cast iron skillet EVER). Grill to taste. Makes a great substitute for hash browns or home fries with breakfast.

I like the scene from Close Encounters where he makes that Mountain out of his. You could perhaps try to re-enact other famous movie scenes with your mash such as Gone with the Wind or Starchky and Hutch.

You can make some potato pancakes with your leftover mashed potatoes. My wife makes a variation of this recipe. Some people like to eat them with apple sauce as a side item, however I like to eat them with ketchup.

The good ole' Shepard's Pie is always a great "go-to" recipe.
All you need is seasoned groun d beef, cheddar cheese , some leftover veggies and your potatoes! Layer it in a cassarole dish, bake until the pototoes are golden brown...enjoy!

make potato cakes!!!!!!!!!!put some flour through the mash potato shape them into really thin scone shapes coat the potatoes cakes with flour and cook on a really hot pan(butter and oil)
