It'd be a tough call for me between "Gather Us In" (the fourth verse has a part 'Not in the dark of buildings confining, not in some heaven lightyears away...' that always sends chills down my spine) or "Lord of the Dance" which was originally a quaker song. "Dance, then, whereever you may be, I am the Lord of the Dance said He, I will lead you all wherever you may be, I will lead you all in the Dance said He."
However, the Agnus Dei sung in the original Latin chant would be a powerful runner up. "Agnus Dei, qui tolis pecata mundi, miserere nobis. Agnus Dei, qui tolis pecata mundi, miserere nobis. Agnus Dei, qui tolis pecata mundi, donna nobis pachem."
Some others that come to mind though are Via Dolarosa, How Can I Keep From Singing (Enya does a particularly lovely take on this old classic), and just about anything from John Michael Talbot (I especially love In The Beginning and One Faith).
Wow, can you tell you can take the boy outta the catholic but you can never take the catholic outta the boy? *LOL* Ah well, being an atheist doesn't negate my love of good music, regardless of the genre.
On a more modern cant, Godspell and Jesus Christ Superstar both are powerful interpretations of the scriptures and contain a beauty all their own.

I can't remember the specific names, but there were several pleasant songs I remember from Catholic mass (when I used to go nearly a decade ago).
