I always seem to end up throwing the crusts away from the loaf of bread, so was trying to find a recipe for using them as I hate to throw things away. Anyone have any ideas?

Oh, never let those go to waste! Put 'em in the food processor for bread crumbs, bag 'em and put in the freezer. You can bread chicken or fish, meatloaf, meatballs, anything that calls for bread crumbs. You'll never buy them from the store again.

butter, season as desired , toast them in the oven until golden brown and crisp, crumble, store in the freezer- use as bread crumbs for
meatloaf, meatballs, ..etc

toast them and make croutons or homemade bread crumbs!
