Giblets (pronounced JIBB-letz; also GIBB-letz) are the heart, liver and gizzard of poultry.

They are the heart, the liver, the neck and the gizzard. The heart it's he triangular shaped cone, the liver is the purplish mass, the neck has all the bones in it, the gizzard is the big lump with the two side lumps.
The kidneys should have been taken out, but they may may still be found in the hind part of the back on both sides of the backbone. Most people do not eat it.
Boil them about 30 to 45 minutes and add the meat to the dressing or stuffing. There is some gristle in the gizzard, don't eat that.
