We ARE created in God's image, but to understand God, we must create "him" in our own image, because "he" is beyond human comprehension. No matter how much further we theorize and begin to understand the awe of God, we cannot even begin to fathom the vastness of God's reach. God, being outside of time AND space, can be whatever, whomever, or wherever "he" wants to be and "he" is everywhere.
Our image of God is just a combination of various parts of God which help us form a perception of "him". Being flawed (human), we have to understand that no matter what image we create of God, we cannot set that image as fact, merely an impression.
Anyways, I looked up a few sources on this topic. You will find them below:
***UPDATE***
Sometimes, I just don't understand where the thumbs downs come from. I stayed true to the subject.

I once heard a quote that said something to the effect of, 'You know you've created God in your image when He hates all the same people you do.' It's so true....

Yes I believe that we do,there are various reasons that we do this but I think that the main reasons are these,
1. our ego`s tell us that we are so pious and holy and therefore we start believing in our own press, and somewhere in all this we subconsciously feel that God is like us.
2. we believe that we are so in tune with God that we dictate what His will is each day, and so we can excuse almost everything we say or do as being the Gods blank cheque, and we see this most often in the excuse to kill for God, and normalize this as His will when all along it is our will, our inflated ego and our pride.

The churches I grew up with said that God is so great that no human mind can understand him. Makes sence to me.
So, we create mental images that we CAN understand.

That would be ego. GOD is beyond the mind and form, from which ego arises.
To feel GOD, ego needs to be dissolved. Only then can we feel true Love, Joy, and Peace which comes from the ONE we call GOD.
