I tried to make some Divinity yesterday and it was a complete disaster. It was my first time trying it. I was just wondering if there was any truth to the weather?

Humidity does play a role in the making of divinity.
On a humid day you should use one teaspoon less water (if the recipe calls for one cup). Because you are beating the egg whites
until they have "peaks" the tricky part is adding the sugar corn syrup mixture. I believe when you start to add the additional ingredients that you should for go an electric mixture and do it by hand. Sometime the mixer will make it too stiff...which can also be a problem. Keep at it...Practice makes perfect!

I have nightmarish memories of trying to make divinity. It was stuck to everything for days!

Yes, humidity and high altitude matter, but I think there are easier candies to make

I made some wonderful toffee yesterday. Here's the recipe

2 sticks butter
1 cup sugar
1/4 cup water
1/2 cup chocolate chips

boil ingredients in 2 qt saucepan. set timer for 13 minutes reduce heat to medium. cook 13 minutes stirring constantly. Pour out on sheet pan and sprinkle chocolate chips on top when warm, spread chips around like frosting

Oh my, yes. If it is damp out then you have to adjust the amount of water you put in it. If you are at a higher altitude then there are more adjustments to be made.

I love divinity and used to make it all the time when my
children were little but the weather plays a large factor in the outcome.

the weather will be what it is wheather you like it or not.
I do not see how the weather and Divinity fits together.

Good form for trying....I have been trying for years....Only come out once when it was dry...Humidity will ruin it....Remember it is a candy and picky...Cheers

I found it did. when especially wet/humid, it doesn't come out well at all.
