I would think some of the sugars transform into something else. Perhaps carbon.

NO of course not. It's the white flour it was created with and darkly toasted will not change this. White flour is just a glue that will give you a big belly and clog your arteries. No redeeming qualities to it at all. If you want to reduce the carbs look for one made low carb. If you must eat bread then the best is a high grain multibread that has pieces you can see. Just because it says wheat on it the label and doesn't have a fiber level higher than 3 or 4 it isn't worth eating either.

Skeeter knows what she's talking about. I buy this made in Canada organic bread at an OroWheat outlet, like a buck a loaf ($3.75 at a regular store). It's very....chunky, nuty, oaty. Most people think it's gross...but they eat white bread...which makes me gag.
