Here are some Boondi Recipes:

Ingredients:
2 cups gram Flour (besan)
11/4th cup Water
Oil for deep-frying
Preparation:
Gradually mix the water into the flour to make a smooth batter.
Whisk well and leave for 10 minutes.
Heat the oil in a heavy-bottomed pan. using perforated spoon with round holes, pour the batter into the oil, shaking the spoon so that the batter drops fall through in pieces.
Use a little of batter at a time. Use a clean, perforated spoon to turn the bondi and to take them from the oil.
Drain the bondi on absorbent kitchen paper and store in an airtight container for future use.
Keeps best for about a month.

Recipe ingredients
1 cup gram flour
1/2 cups sugar
1 cup water
1/4 tsp. cardamom powder
6-8 chopped almonds
Ghee to deep fry
Perforated flat spoon about 5" diameter
Recipe method
Boil the sugar and water together. Add a tbsp. of milk to bring up the scum.
Remove scum and boil liquid till the syrup is sticky between the fingers.
Keep aide, but keep warm for use.
Make batter with gram flour, which should not be too thin.
The batter should evenly coat the back of a spoon when dipped in it.
Heat ghee, hold perforated spoon a little above the hot ghee, pour some batter on the spoon.
Tap very lightly at edge of spoon to allow small droplets to fall in the ghee.
Pour back remaining batter and wipe spoon.
Stir the boondis in the ghee gently and fry till crisp but not brown.
Drain and put into the syrup. Keep for 3-4 minutes before draining from the syrup.
Spread on a wide plate, add cardamom powder, almonds and mix gently.
Cool completely and loosen the boondi with finger till each droplet separates.
Store in airtight container.
Note: Take great care while dropping the boondi in the hot ghee so as not to burn yourself.

MOTICHOOR LADOO

Ingredients

2 1/2 cups Gram flour (not superfine variety)
500 ml.Milk
1/2 tsp. Cardamom powder
3 cups Ghee
A fineholed shallow strainer spoon

For Syrup

2 1/2 cups Sugar
3 1/2 cups Water
2 tbsp. Milk
3 cups Ghee

Method

For Syrup:
Put sugar and water in a vessel and boil.
When sugar dissolves, add milk.
Boil for 5 minutes till scum forms on top.
Strain and return to fire.
Add colour and boil till sticky but no thread has formed.
Add cardamom powder and mix. Keep aside.
For Boondi:

Mix flour and milk to a smooth batter. Mix all the ingredients mentioned under stuffing except milk.
Heat ghee in a heavy frying pan.
Hold strainer on top with one hand.
With the other pour some batter all over the holes.
Tap gently till all batter has fallen into hot ghee.
Stir with another strainer and remove when light golden.
Keep aside. Repeat for remaining batter.

To Proceed
Immerse boondi in syrup.
Drain any excess syrup.
Spread in a large plate. Sprinkle few tsp. hot water over it.
Cover and keep for 5 minutes.
Shape in laddoos with moist palms.
Cool and keep open to dry, before storing in containers.
Making time: 1 hour
Makes: 25 pieces
