To answer your question we need to understand first what is GOUT.
Gout is one of the most painful rheumatic diseases. It results from deposits of needle-like crystals of uric acid in connective tissue, in the joint space between two bones, or in both. These deposits lead to inflammatory arthritis, which causes swelling, redness, heat, pain, and stiffness in the joints. The term arthritis refers to more than 100 different rheumatic diseases that affect the joints, muscles, and bones, as well as other tissues and structures. Gout accounts for approximately 5 percent of all cases of arthritis.
What is uric acid -Uric acid is a substance that results from the breakdown of purines, which are part of all human tissue and are found in many foods. Normally, uric acid is dissolved in the blood and passed through the kidneys into the urine, where it is eliminated. If the body increases its production of uric acid or if the kidneys do not eliminate enough uric acid from the body, levels of it build up in the blood (a condition called hyperuricemia). Hyperuricemia also may result when a person eats too many high-purine foods.
What are the food high in purine -
Liver
Fish
Brewer’s yeast
Spleen
Kidney
Mushrooms
Soya
remember it’s not what foods are high in uric acid! But their purine content that is important.Study demonstrates that consuming foods high in purines contributes to the amount of uric acid in the body and therefore predisposes a person to gout.

Signs and Symptoms of Gout
Hyperuricemia
Presence of uric acid crystals in joint fluid
More than one attack of acute arthritis
Arthritis that develops in 1 day, producing a swollen, red, and warm joint
Attack of arthritis in only one joint, usually the toe, ankle, or knee

High protein amounts do lead to gout but usually only in the case of red meat or high fat content combined with the richness of the food. I've never heard of tofu or legumes causing it. Butter, lard, those types of things can be a problem as well as margarines. Cheese also has high fat content.

Gout is the name given to a disorder where uric acid builds up in the blood to the extent it begins to crystallize and clump in the blood stream. The kidneys ordinarily filter out uric acid from the blood, but in the case of gout they are not able to filter it out fast enough. The crystals tend to get caught in joints, where the veins narrow to pass over the joints, and decrease the blood flow to the area below. Usually it is noted first in the toes, particularly the big toe, although in bad cases it can cause swelling and pain in other joints. Uric acid is produced by the body itself through the destruction of cell, particularly muscle cells, and also through the digestion of protein- particularly meat, but also wine and some other foods. It used to be called the rich man's disease because only the rich could afford a diet high in meat and drink wine instead of beer, water, milk or juice. A good healthy diet consisting of plenty of vegetables and whole grains, low in meat and refined white flour products, is the best way to avoid getting gout and in helping to control it if it develops. You can do a web search for gout diets that will give you a pretty good list of foods to avoid and foods to eat more of. Soy products are on the good list, but legumes such as dal and other dried beans/peas should be eaten in small quantities- if you have a problem with high uric acid levels.
Gout would not be my first guess to explain a swollen ankle or ankles. I would be more inclined to eliminate injury, and then to consider water retention as the most likely explaination. Or possibly that you are standing in one positon for an extended period of time, or sitting with the legs crossed at the ankles- all of which could decrease circulation and result in slight swelling and tenderness in the ankle. There are just many more explainations which work, other than gout.
