Perhaps the reason the yolk is sometimes left out of omelets is because they use the yolk for making ice cream and making omelets with the whites is the healthier option rather than making cakes etc

yolks contain more calories and more cholestrol, people watching their waists and health tend to leave the yolk out, its effective if all their meals are balanced but also much of the nutrients are in the yolk and yolks are the yummy part of the egg. Omelets are beaten eggs which are then fried and anything can be added to it like cheese or mushrooms.

Thanks to the "junk science" perpetrated by some "health nuts" a few years back, the false idea grew up that the egg yolk was a source of "bad" cholesterol and if you ate too many egg yolks you would have a heart attack and die.

Research today is finding that not only are eggs and especially egg yolks, the best low cost source of protein, but that the cholesterol produced is actually "good cholesterol" which not only doesn't produce health risk, but is actually necessary for maintaining a healthy heart and arteries!

Eggs without yolks not only taste bad, they ARE bad for you!

They're trying to reduce the fat and calories in the omelet. Yolk has all the fat in an egg. There's a pretty decent explanation at the link listed below.

The egg yolk contains around 60 calories which is about four times the caloric content of the egg white. Also it contains most of egg's fats and cholestrol and approx. half the protein content.

I therefore think that leaving out the egg yolk wouldn't cause much difference in terms of taste but would definitely lower the calorie content of the omlett.

The yolk has a lot of cholesterol and calories. Less tasty that way too.

possiilities..

1.the egg is full of fat while the white is protein so its healthier
2. the taste some people do not like the taste of the yolk
