It's actually the WYSIWYG (What You See Is What You Get) displays that today's programs have that ruins your eyes. Apple's original Macintosh, copied by Windows, put the white background with black letters to look like the printed page. Before that, the much more ergonomic black background with bright (amber, green, and white) letters was used. Virtually all studies indicate that the dark background is better for your eyes; some programs let you change the background/letters and it can really help.
Think about it -- your eye pupils get small in bright light and open big in dark light. So, with a white background, you're straining to see the black against the white while your eyes want to let in less light. With a dark background, the pupils are wide open and it's easy to pick up the bright objects (letters) you are looking for. Try it sometime -- it can make a huge difference!
