Ingredients

Basmati Rice 4 cups
Mutton 1 kg.
Curd 1 cup
Onion 2 cups
Tomato’s 2 nos.
Coriander leaves 1 cup
Mint Leaves 1 cup
Ginger 1 inch
Garlic clove 1 large
Oil 1 cup
Cloves 3 nos.
Cardamom 3 nos.
Cinnamon 2 sticks
Turmeric 1 tsp.
Cumin Powder 2 tsp.
Coriander powder 2 tsp.
Chilly Powder 1 tsp.
Chillies 6 nos.
Salt

Preparation
Grind ginger, garlic, mint and coriander leaves to a fine paste along with yogurt.
Wash the rice and meat pieces. Heat oil and fry all the spices and onions. Fry them till they turn to golden brown. Now add the ground masala paste and finely chopped tomatoes. Fry this out till it is cooked well. Now add the washed meat and water. When it starts to boil add salt, turmeric, chilly powder. Add the rice and allow it to cook for about 15 minutes.
Cover the half cooked biryani and over this keep red hot coal for about 20 minutes. Stir in-between once. Keep it close till it is served. Serve it hot with any spicy curry and raitha.

well if u want chicken biryani then here is my recipe
put chicken in a bowl add salt n chillipowder according to ur taste. Add 225 grm yougart ,ginger garlic paste1tb and grounded (khaskhash)1 tb if u can get it.mix n leave it to marinade for 2 hrs.
chop onions about 3 medium size fry them in oil 1cup till pink then add ginger garlic paste n fry till smell comes then add marinaded chicken n leave to cook on low flame for half an hour.
cook rice separately by putting it in salted boiling water . when tender drain the excess water.
in a separate pan make layers of rice n meat alternatively
then cook for ten minutes on low flame.
mix it n ur dish is ready

Ok, here is my recipe, i was raised in Dubai and we have been making this for years!

First, shallow fry the meat; Chicken or lamb works best
Then add 1/2 jar of Patikas curry PASTE not SAUCE.
Then add water and leave to simmer for 1 1/2 hours. (remember to keep topping up with water!
Add basmati rice to water level and leave on a low heat.
once water is absorbed, (more added if needed) leave to stand for 10-15 mins.


Rice should be perfect and meat should be 'melt in the mouth' soft - try not to stir it, leave it to work its own magic!!!
