I depends on Office version you have just installed, I think Einstein is only available in 2000 and older; but you may try:
1. Right click on the assistant
2. From the pop-up list, select Choose Assistant…
3. On the Gallery tab, use the back and next buttons to scroll through the assistants
4. When you find one you like, click OK; to stick with Clip pit, choose Cancel
Please note that the available choices may vary depending on options you specified at the time you installed Word.

Click the Office Assistant.
If the Assistant isn't visible, click Show the Office Assistant on the Help menu.
In the Assistant balloon, click Options.
If the Assistant balloon isn't visible, click the Assistant.
Click the Gallery tab, and then click Back or Next until you see the Assistant you want.
Note The Assistants shown on the Gallery tab are the only Assistants available for Office 2003.

They removed the office assistants in Office XP if I remember right. I don't know why exactly they did that, other than Office XP was supposed to be so easy you didn't need assistance.
