Start talking about things like school. Talk about high school and casually ask when she graduated. That will give you an estimate of how old she is. Or you can just come out and ask her how old she is. She shouldn't be offended by such a question.

No, not if she looks older than 25. She'll tell you when she's comfortable revealing it. Women over 25 rarely, if ever reveal their age during the first few dates.
