Can I make Panna Cotta with melted ice cream?

PANNA COTTA

1 T GELATIN
2 T COLD WATER
2 C HEAVY CREAM
1 C HALF AND HALF
1/3 C Sugar
1 1/2 t flavoring (Vanilla, Almond, etc)

Put the water in a small saucepan and sprinkle the gelatin over the water.
Wait about a minute for gelatin to melt and then heat slowly until gelatin has completely melted. In a larger saucepan heat the cream, half-and-half and sugar until just below boiling. Add the gelatin to the cream and stir. Remove from heat and add the flavoring.

Pour the cream into 6 small glass bowls or ramekins. Refrigerate over night or for at least 6 hours. Put the bowls or ramekins into a warm water bath for a few seconds and use a small knife to loosen panna cotta and invert on plate.

Coconut Panna Cotta

Yield: 20 oz.
Preparation time: 15 minutes

For the mango-papaya sauce:

• 3 oz. The Perfect Purée of Napa Valley More Mango, thawed
• 3 oz. The Perfect Purée of Napa Valley Hawaiian Papaya, thawed
• 2 oz. simple syrup

Method:

1. Combine ingredients and transfer to a squeeze bottle or covered storage container.

2. Refrigerate until use.





For the panna cotta:

• 10 oz. The Perfect Purée of Napa Valley Crazy Coconut, thawed
• 8 oz. heavy cream
• 4 drops vanilla extract
• 2 tsp. powdered gelatin
• 2 oz. cold water
• Mint sprig to garnish


Method:

1. Sprinkle gelatin over cold water and set aside.

2. Simmer Crazy Coconut purée, cream and vanilla for 2 minutes. Whisk in dissolved gelatin.

3. Pour into molds and refrigerate overnight.

4. To unmold, dip molds in warm water or warm slightly with a butane torch and invert on a plate. Surround the panna cotta with mango-papaya sauce and garnish with mint.
